Slow Cooker Rotisserie Chicken Recipe

- 1 4-5 pound Whole Chicken
- 1 Tablespoon Paprika
- 2 Tablespoons Brown Sugar
- 2 teaspoons Garlic Powder
- 2 teaspoons Onion Powder
- 2 teaspoons Salt
- ½ teaspoon Pepper
- 1 Tablespoon Olive Oil
Prepare the whole chicken by removing the innards from the chest cavity. Use a paper towel to pat dry both inside and out.
In a small mixing bowl, combine the paprika, brown sugar, garlic powder, onion powder, salt, and pepper to make a sweet rub. Mix well, then use your hands to rub the mixture all over the chicken. Tie legs together if desired.
To keep the chicken from resting on the bottom of the slow cooker, place a small wire rack or 4 balls of aluminum foil.
Cover and cook on low for 6-8 hours or on high for 4-5 hours until an internal thermometer reads 165 degrees in the thickest part of the breast.
Preheat the oven broiler about 30 minutes before the chicken is done cooking. Once the chicken has cooked through, place the whole chicken on a large baking sheet. Drizzle with olive oil and broil for about 2 minutes, or until the chicken skin is golden and crispy. Be sure to keep a close eye so that it doesn't burn!
Remove chicken from the broiler and let rest for at least 15 minutes before carving or shredding. Enjoy!
